After having been trained as a mixologist at Hibiya Bar and Grand Hyatt Tokyo, Ko was promoted to be the Head mixologist at Hyatt Centric Ginza. In 2021, he joined Beige Alain Ducasse Tokyo for further enthusiasm in fine service and became the Manager of the Bar at Le Jardin de Tweet at its opening.

Seitaro has worked for many great establishments such as AIMEE VIBERT, Beige Alain Ducasse Tokyo and SOMBEUIL and made his return to Beige as a head waiter in 2020, where he later experienced a position as a dining manager. At the re-opening of the restaurant in 2022, he was promoted to be the chef sommelier who also is in charge of Le Jardin de Tweet.
